I was honored to be invited to the Dessert Comes First Anniversary Party by food writer extraordinaire Lori Baltazar last April 9. I knew there would be food…a LOT of good food, so I prepared. I created enough space in my tummy for ALL the food. But little did I know that my heart also needed some priming…
After making my way through the throngs of fans (Yes, Lori you have fans, including myself), Lori thanked me for coming, hugged me and then excitedly pointed her fingers to the booth up front. “You MUST try the beacon.” That was what I heard. Beacon. My seemingly well-educated foodie mind (self-educated by countless Food Network and Discovery Travel and Living shows, and books upon books and blogs upon blogs) could not grasp what she said. Beacon? Is there such a dish? Did I even hear it right? Maybe my hearing was that bad? It was highly recommended by Lori herself, so it must be THAT good.
As I approached the booth, a soft gasp of amusement escaped my tiny mouth with the ginormous appetite. Lo and behold, THE “Bekon”.
Lori meant “Bekon” and not “beacon”. Becon, a creation of Paisley Pastry, is a hybrid of bacon and lechon kawali. A sinful crispy, deep-fried thin slice fatty pork belly strip. Did I just say pork belly in deep fried in a sentence? Yes I just did. Those two words made your heart skip a beat right? Oh, and that’s not all. The deep fried pork belly came with an equally sinful sauce, a rich dark chocolate ganache.
Madness I tell you! The deafening crunch of the pork against the velvety smooth ganache. The salty fat blisters neutralized by the depth of the earthy sweetness of the chocolate. It was simply heart stopping…Good thing my heart was made up of stronger stuff and I did not end up in a permanent food coma. I still have a long way to go before I get to start AND finish that book of mine.
